Quartz is the backend engine for drawing on Mac, and win32 is well... the same thing on Windows. You actually don't need to worry much about it, if someone tries to create a Quartz surface on a non-mac platform, cairo will automatically complain; all you have to do is pass it on back to the user as an exception :) Great work!
